Beetroot risotto with quark

I don't think I've ever had beetroot risotto. Does it take as diligent stirring as the other sorts?

I use carnaroli rice and it doesn't require much.

Roast Beetroot and garlic / start rice half way through
Blend Beetroot and garlic
Add to rice
Serve with quark
